Even a novice candy maker (like me) has the skills to end up with a slobber-inducing end product. In order to make these delicious chocolate coffee truffles, you will need the following ingredients: · one teaspoon instant coffee crystals · one half cup semisweet chocolate chips · two tablespoons corn syrup (light) · two tablespoons water · one cup finely chocolate cookies crushed (think Oreo) · two teaspoon pure vanilla extract · one half cup finely chopped almonds ( blanched almonds) or you can use macadamia nuts (you can find these pre-chopped and packaged in the baking aisle.) · one half cup powdered sugar (sifted) To coat these little delicacies use chocolate slivers or nuts such as almonds or macadamia that have been chopped fine.(you can choose one of these tasty treats, or combine two or more of them to suit your taste.) First of all, you are going to need a double boiler. If you already have one, that's great. If not, you can generally pick up a good one for less than $20. Now to get started. Mix the chocolate chips, granules of coffee,corn syrup and pure vanilla extract along with the water. All this should be mixed and put in to the top container of the double boiler. The bottom container should be hot water. Stir frequently to prevent scorching, and continue until you see that the chocolate has completely melted. Then, mix with electric portable mixer (preferred method) beat until smooth then remove from heat. )If you don’t have the electric mixer use a whisk then remove from heat). Next, you are going to want to add the cookie crumbs. The add the powdered sugar and finally the nuts. . Do this slowly to avoid clumping. You need to be sure that it is blended well. After that, leave the mixture to rest for around ten minutes. Once they have cooled shape them into small balls.. After chocolate mixture has been rolled into balls (and preferably while it is still slightly warm) roll them in your coating mixture that you made. (or a combination thereof, whichever you have decided on.) Cover a tray with wax paper and place the truffles on this. Use another piece of wax paper to cover them lightly. Let them chill for the night. .In order to preserve freshness, store your truffles in a container that will give a tight seal.
