One of the best cappuccino muffin recipes that I have ever found is also the simplest. Indeed, the muffins themselves require only a few inexpensive ingredients, most of which you can probably already have around the house *1 small bag of milk chocolate chips *2 cups of flour but the self raising (this is important - without the proper flour your muffins will not rise) *3/4 cup caster sugar *1 teaspoon of pure vanilla extract *2 tablespoons coffee ( instant) (Folgers is my favorite) * 1/2 cup unsalted butter and 1 egg *one cup milk In addition to requiring only a few simple ingredients, these cappuccino muffins are also surprisingly simple to prepare. The first and one of the most crucial and oft overlooked steps is to get your oven up to 375º F / 180ºC. Then, you will want to use a small sauce pan for melting the butter then allow for cooling; doing this on low heat to avoid scorching. While the butter is cooling, and while waiting in a large bowl mix the flour and sugar. . In a separate bowl, crack the egg then mix the coffee granules with the milk, mix it well and add this to the egg. .Now take this mixture and add it the flour and sugar mixture you prepared, next add the butter that you melted.. Mix lightly. (DO NOT OVER MIX). Now you can add in the milk chocolate chips. You are ready to fill the muffin tins but do not fill them too full, actually 2/3rds is perfect. The will need to bake for about 15-20 minutes, just long enough so when you touch the center of the muffins they retain their shape. Once you remove them from the oven leave them cool for about five minutes then place them on a cooling rack to set them on so they can cool. ; this will avoid crumbling and breakage when removing from the pan. These cappuccino muffins are delicious on their own, or you can top with cream cheese icing or cheese curd frosting. You can even use just a basic vanilla or chocolate frosting as well. You could even do a variety.
